Vegan Zucchini Bread & Vegan Alfredo Sauce Recipes

ROH - Vegan Zucchini Bread
1/2 cup regular sugar
1/3 cup brown sugar
1 - cup applesauce
1/4 cup vegetable oil
1 - tsp vanilla extract
1 - cup all-purpose flour
1/2 cup almond flour
1 - tsp baking soda
1/2 tsp baking powder
dash of salt
Lots of cinnamon (my preference)
Nuts - optional
2 - dashes of nutmeg
2 - cups grated zucchini - drain excess water
Mix dry ingredients, then add wet ingredients.
Pour into baking dish and bake at 350 degrees for 50-55 minutes. Please note: Your bake time may differ.
ROH - Vegan Alfredo Sauce
1 - Cup of Raw Cashews - soaked in water over night & drained
3/4 cup water
2 - garlic cloves (Roasted)
1/2 tbsp Lemon juice (I use juice from a real lemon)
1/2 cup diced onions
1/4 tsp dried Rosemary
1 - tsp salt
1/4 tsp pepper
Blend in blender until smooth. Taste & add more seasoning if needed
Warm & our over your favorite pasta. Enjoy!!
